Actually, I like a big bowl of soup any time and today I want to give you a quick review of Spice n’ Easy Sun-Dried Tomato Minestrone soup mix from Savory Spice. Yeah, I know this isn’t the type of thing that we normally review here on the Gadgeteer, but gadget fanatics need to eat too, right? Let’s get cookin!

Ingredients:

Let’s make soup!
You’ll need a few extra things to make the Spice n’ Easy Sun-Dried Tomato Minestrone soup as yummy as possible. Those things include half a stick of butter, a can of diced tomatoes, 1 cup of small uncooked pasta, 5 cups of water, and any extra veggies or meats that you want to add. I had some leftover baked hamburgers that I chopped up because I like my soups to have a lot of protein.
Hey, I do have something gadget-related that I can talk about! I used the Ninja Foodi pressure cooker that I reviewed back in 2019 to make this soup! I still regularly use this cooker.
The first step to making the Spice n’ Easy Sun-Dried Tomato Minestrone soup is to melt the half stick of butter.
Then you can add in the soup mix. And no, those aren’t my cat Ozzy’s hairs stuck to the package. The soup mix is in a pouch that reminds me of Tyvek or something like that. So when you tear it open, it frays.
The second step – dump in the soup mix.
Third step – dump in the can of diced tomatoes with the liquid.
Fourth step – dump in the pasta (I used orzo) and the rest of your optional ingredients like veggies and meats.
Finally, you can pour in the 5 cups of water and give everything a good stir.
If you want to cook the Spice n’ Easy Sun-Dried Tomato Minestrone soup in a regular pot on the stove, the instructions tell you to bring it to a boil and simmer for 20 minutes, then pour in the pasta and cook another 15-20 minutes. But I didn’t want to wait that long, so I used the Ninja Foodi and set it to pressure cook for 10 minutes.
And here we go. Soup’s on! The house was filled with wonderful smells, but how does it taste?
We absolutely loved it! I even went back for seconds, and we’re having it again tonight. So yes, it was delicious and very flavorful with a tiny bit of heat from the crushed red pepper flakes. It completely beats any canned minestrone soup from Campbell’s or Progresso that I’ve tried and reminded me of something you’d get in an Italian restaurant.

I know that I could google for minestrone recipes, go to my local grocery store and buy all the ingredients, come home, and prepare a similar soup from scratch, but sometimes you just want a hot steaming bowl of soup FAST and don’t want to do all the necessary prep work.
