REVIEW – I’ve been following a lazy Keto / low carb diet for the past year. I’m pre-diabetic and use Keto to keep my blood sugar levels stable and to hopefully remove the pre-diabetic label and get back into the non-diabetic group at some point in the near future. Just because I’m eating low carb doesn’t mean that I want to deprive myself of treats. That’s where Rip Van Wafers are awesome. They taste like a regular cookie but they don’t raise my blood sugar. What is it?

Rip Van Wafers are individually packaged layered wafer cookies with dark chocolate or chocolate hazelnut filling and only 4g of net carbs per cookie.

Rip Van sent me samples of their two wafer cookie flavors: Dark Chocolate and Chocolate Hazelnut.

Each individually wrapped wafer cookie is 120-130 calories and only 4g net grams of carbohydrates. The cookies have ingredients that are simple but high-quality ingredients.

But how do they taste? Delicious! Each cookie has three layers of crispy wafer with two thick layers of either dark chocolate or chocolate hazelnut. The taste is definitely not what you would consider low carb or Keto.

Final thoughts
