REVIEW – I’ve been following a lazy Keto / low carb diet for the past year. I’m pre-diabetic and use Keto to keep my blood sugar levels stable and to hopefully remove the pre-diabetic label and get back into the non-diabetic group at some point in the near future. Just because I’m eating low carb doesn’t mean that I want to deprive myself of treats. That’s where Rip Van Wafers are awesome. They taste like a regular cookie but they don’t raise my blood sugar. Let’s learn more…
What is it?
Rip Van Wafers are individually packaged layered wafer cookies with dark chocolate or chocolate hazelnut filling and only 4g of net carbs per cookie.
Nutrition and taste
Rip Van sent me samples of their two wafer cookie flavors: Dark Chocolate and Chocolate Hazelnut.
Each individually wrapped wafer cookie is 120-130 calories and only 4g net grams of carbohydrates. The cookies have ingredients that are simple but high-quality ingredients.
But how do they taste? Delicious! Each cookie has three layers of crispy wafer with two thick layers of either dark chocolate or chocolate hazelnut. The taste is definitely not what you would consider low carb or Keto.
What I like
- Tastes great
- Keto-friendly, low carb, vegan
What I’d change
I’ve tried a LOT of Keto snacks and Rip Van Wafers are head and shoulders above similar snacks. If it sounds like I’m shilling for them, I’m not. They sent me 4 of each flavor and after eating them, I’m a customer and have ordered 4 boxes.
Price: $19.99 per box of 16 cookies (2 box minimum order, use coupon code: Gadgeteer15 to save 15%. The code is only valid on the Rip Van website, 1 per user. It is valid against any cart size or products on their website. Discount is entered at checkout.)
Where to buy: Rip Van and some of their products are also available on Amazon
